Baked Eggs with Garlic Spinach

OCTOBER 13th, 2014 — Inspired by having leftover spinach, onion, and eggs, before embarking on a short trip to Catalina Island for a shoot. Also inspired by Yotam Ottolenghi.

Transcription:

Finely dice 1 clove of garlic… for some garlic-yogurt dip.
Stir in chopped garlic, salt, black pepper, and lemon juice.
Store in refrigerator. (The longer you store it, the more flavor you’ll get out of it.)
Dice half an onion.
Tip: Remove the center bulb to avoid tears while cutting.
Dice another clove of garlic.
Melt 1 tablespoon of unsalted butter.
Add the garlic. Sautée the onion. Add salt & pepper.
Add as much spinach that will fit. Let the spinach wilt.
Add garlic salt & lemon juice.
Make two nests.
Crack two eggs. Add salt & pepper.
Bake for 10-15 minutes at 300 degrees.
Sprinkle with paprika.
Add a dollop of the garlic-yogurt dip.
