Sweet Shiitake Rolls

NOVEMBER 14th, 2014 — Always loved the shiitake-avocado rolls at M Café. Not a whole lot of vegetables are enhanced by sugar. Usually root vegetables come to mind, since they’re starchy and have a lot of body. But mushrooms? What a bright new way to enjoy shiitakes, in a way that’s totally complementary to sushi.

Transcription:

Remove the stems from 8-12 shiitake mushrooms.
Slice.
To 1/2 cup water, add 1 tbsp soy sauce, 1 tbsp rice vinegar, and 2 tsp sugar.
Let the mushrooms simmer in soy stock.
Add vinegar and sugar to cooked rice. [1 tbsp and 1 tsp per 1 cup of rice.]
Stir, and microwave for 40-60 seconds.
Stir again, and add more vinegar and sugar as needed.
Microwave again.
Assemble.
